Ingredients:
For Marinating the Chicken:
Chicken boneless pieces, 1 pound, cut into bite-sized cubes
Yogurt: 1/2 cup
Ginger-garlic paste: 2 tablespoons
Red chili powder, 1 teaspoon
Turmeric powder, 1/2 teaspoon
Garam masala, 1 teaspoon
Salt: 1/2 teaspoon (adjust to taste)
Lemon juice: 2 tablespoons
Egg 1
Cornstarch: 2 tablespoons
All-purpose flour: 2 tablespoons
For Frying:
Cooking oil for deep frying
For the spice mix:
Curry leaves: a handful
Green chilies (6–8), slit
Thinly Sliced Ginger, 1-inch piece,
Thinly Sliced Garlic: 4-5 cloves,
Red chili powder, 1 teaspoon
Cumin seeds: 1/2 teaspoon
Salt, a pinch
For Garnish:
Fresh cilantro leaves for garnish

Instructions:
Add yogurt, egg, ginger-garlic paste, turmeric powder, red chili powder, garam masala, salt, lemon juice, cornstarch, and allpurpose flour in a mixing bowl.
Add chicken and mix everything until the chicken is wellseasoned. Refrigerate the bowl with plastic wrap for a minimum of 30 minutes, or, for the best result, allow them 4-5 hours to
marinate.
Heat the oil in a pan or wok over medium-high heat, add the marinated chicken pieces, and fry them in batches so the pan doesn’t get too full.
Fry the chicken for 6–8 minutes or until golden brown and crispy. Using a slotted spoon, take the chicken out and put it on a plate lined with paper towels to absorb the extra oil.
In a separate pan, heat one tablespoon of cooking oil over medium heat. Add the cumin seeds and let them sizzle for a moment.
Add in the green peppers, ginger, garlic, and curry leaves. Cook until everything smells nice and gets crispy.
Add red chili powder and a small amount of salt to the mixture.Stir thoroughly to season the spices evenly.
Add the fried chicken pieces to the pan with the prepared spice mix.
Toss the chicken thoroughly in the spice mix and allow it to absorb the flavors. This process typically takes around 2–3 minutes.
