Ingredients
Vegetable oil: 2 tablespoons
Onions (medium, finely chopped): 3
Salt: 1 teaspoon
Garlic (cloves, crushed): 4
Fresh ginger (minced): 1 tablespoon
Hot water: 1/4 cup
Chili powder: 1 teaspoon

Ground coriander: 1 teaspoon
Ground cumin: 1 teaspoon
Ground turmeric: 1/2 teaspoon
Tomatoes (medium, chopped): 2
Green chiles (halved lengthways, optional): 2
Chicken breast halves (skinless, boneless, cubed): 2
Curry paste (such as Patak’s): 1 teaspoon
Fresh cilantro leaves (chopped): 1/4 cup
Directions
In a large, heavy-bottomed pan, heat vegetable oil over mediumhigh heat. Sauté finely chopped onions for 5 minutes or until golden brown and caramelized.

Add crushed garlic, minced ginger, and salt to the pan. Again, sauté until the strong smell of raw ingredients diminishes.

Pour 1/4 cup of hot water into the pan.

Add chili powder, coriander, cumin, and turmeric. Toast the spices to create a flavorful curry base.

Add chopped tomatoes and green chiles (optional) to the pan. Cook until the tomatoes soften and the mixture thickens; it will take 10-12 minutes.

Now add cubed chicken breasts to the pan. and stirring occasionally, until the chicken changes color and gets coated with the spice mixture. This will take approximately 15–20 minutes.

Add curry paste (such as Patak’s) to add extra flavor. Cook for another few minutes.

If necessary, you can add a small amount of water to modify the texture of the curry according to your preference. Taste, and if needed, add salt.  Garnish with freshly chopped cilantro.

Use boneless chicken pieces instead of bone-in chicken for faster cooking time and a different texture.

Add diced bell peppers, carrots, and peas to create a chicken and vegetable medley. Use lamb instead of chicken for a rich and hearty lamb bhuna. Adjust the cooking time accordingly for the lamb.
